Strawberry Cheesecake Bites
INGREDIENTS NEEDED
1 cup 4% Cottage Cheese (blended smooth)
8oz ⅓ less fat Cream Cheese
2 whole eggs
⅓ cup real sugar
1 tsp vanilla extract
Zest of 1 lemon
1 tbsp cornstarch
4 tbsp strawberry jam
Pinch of salt
Strawberry Cheesecake Bites
Makes 12
Instructions:
1. Preheat oven to 325°F. Line a 12-cup muffin tin with liners.
2. Blend cottage cheese completely smooth.
3. Beat cream cheese and sugar until smooth.
4. Add cottage cheese, eggs, vanilla, lemon zest, cornstarch, and salt. Mix until just combined.
5. Fill liners ¾ full.
6. Drop ¼ tsp jam on top of each cupcake.
7. Bake 22-25 minutes at 325°F until just set with a slight jiggle in the center.
8. Cool completely at room temperature, then refrigerate for a minimum 2 hours before serving.
They will look underdone coming out of the oven, trust it.
